MycoTechnology and Adorvia Biotechnology have announced a global collaboration to develop better-tasting, lower-sugar food and beverage products. The partnership centers on a pairing of two biologically derived ingredients.
MycoTechnology’s newest innovation, Zukora Honey Truffle Sweet Protein, is produced through fungal fermentation. The company has built its technology around turning fungal biology into functional food ingredients. Zukora delivers smooth, clean sweetness without bitterness, metallic notes, or lingering aftertaste, a result of the specific fermentation process used to create it.
That protein will be paired with Adorvia’s proprietary Reb M stevia, a plant-derived sweetener known for rapid onset and strong intensity. Together, the two biologically sourced ingredients let formulators build sweetener systems that closely mimic sugar’s taste and sweetness curve while cutting calories.
The companies will combine their scientific and applications expertise to optimize these sweetener blends for manufacturers. They will also conduct joint go-to-market activities in North America under a signed agreement. Adorvia has been named MycoTechnology’s exclusive distributor in China for ClearIQ Natural Flavor, another ingredient created through mushroom mycelial fermentation. ClearIQ is designed to improve the taste of better-for-you foods and beverages.
Jordi Ferre, CEO of MycoTechnology, said Zukora expands the company’s toolkit for natural, non-artificial sugar reduction. He said pairing its clean sweetness profile with Adorvia’s Reb M allows the companies to deliver more sugar-like solutions while extending their reach into new global markets.
Jeff Pei, general manager of Adorvia Biotechnology, said ClearIQ can help food and beverage companies in China enhance desirable flavors while mitigating bitterness and protein off-notes. He said the pairing offers a new way to achieve consumer-preferred sweetness without added sugar or calories.
At IFT FIRST in Chicago, MycoTechnology showcased two prototypes built on the fermentation-derived ingredients: a reduced-sugar lemon lime slushie and a low-sugar chocolate cookie dough protein bar.
